You don't have to have too many large flowers on a cake to make a gorgeous cake, simple is good. The sugar flowers make a cake go from really nice to stunning.
The Hot Sugar Workshop introduces you to the process of working with isomalt or cane sugar that is pulled or blown.
Wedding Cake Design

Spring Flowers Workshop

You will learn an assortment of flowers that bloom in the Spring...this workshop will include:
The Cherry Blossom with buds and leaves. This will be fashioned into a branch and blossoms for the side of a cake will be included.
Freesias are gorgeous Spring blossoms that grow from small bulbs..they are fragrant in nature and fabulous on wedding cakes.
Lilacs are another loveley spring flower that is perfect for fancy cakes.
Hydrangeas are a simple but beautiful and popular flower in gumpaste for cakes.
Poppies are a simple but stunningly beautiful flower for any special occasion cake.
This workshop is going to be held for 4 hours a day over a period of 3 days. The 3 days do not have to be consecutive days but drying time is required.

You will learn to make roses in several varieties, open, full blown roses, cupped roses and little roses like the ones on Evie's cake. There will be tea roses and tiny tiny roses, buds and wild roses.

Basic Buttercream Cake Decorating

For those of you who have never decorated a cake, this is the beginners class for you. You will learn to fill and professionally ice a cake, pipe flowers in Italian meringue buttercream and decorate your cake to take home. The flowers that you will be learning to pipe are roses, peonies, 5 petal blossoms, leaves, crysanthemum, daisies and wisteria..time permitting..this is a tall order but some students do get to the wisteria! You can do as much as you are comfortable with.
Remember to wear comfortable shoes, tie your hair back, light colored clothing is preferred and watches need to be removed. Other than that..this is a delightful and popular class.

Chocolate Blackout Cake with either Bavarian Cream Filliing or Creme Parisian

Chocolate Blackout Cake is a cake worth having in your cake making repertoire..it is rich and moist with a deep chocolate flavor.
Filled with either Bavarian Cream or Creme Parisian it is truly delightful. Bavarian Cream is a vanilla cream that is light because it is stabalized with gelatin. There are egg yolks in Bavarian Cream.
Creme Parisian is a hot cream over chocolate concoction that whips up into the most heavenly cream and is without gelatin or egg.
The cake will be iced with Italian meringue buttercream and decorated with gumpaste flowers.

Swedish Butter Cake

This is truly a stand alone butter cake in the world of butter cakes. There is a pound of butter in this cake for 4 eggs compared to an all American butter cake which has 8 ounces of butter for 4 eggs. You begin to see the just by this math that the Swedish Butter Cake is a melt in your mouth delight. This is the best cake to learn to bake if you have never baked a cake in your life..and this is a great cake for kids to learn to bake.
We will fill this cake with either fresh strawberry mousse or a raspberry mousse or a chocolate mousse..it is up to you..this is a very versatile cake in that is can be turned into a coconut cake with coconut Bavarian or an almond cake which is one of the most popular cakes for brides.
The cake will be iced with Italian meringue buttercream and decorated with gumpaste flowers.

Vanilla Chiffon Cake

This is the workhorse of my studio. We make more vanilla chiffon cake than just about any other cake. This is a light cake which lends itself to be flavored with syrups spiked with liquors like Rum, Grand Marnier, Bailey's, Kahlua, Chambord and the list goes on and on.
The kinds of fillings that are perfect in this light sponge cake are mousses of course...strawberry mousse made with fresh strawberries or raspberry mousse, lemon mousse, blackberry mousse, chocoalte mousse or Bavarian cream..whatever mousse or cream you choose, you won't be disappointed with the results.
The cake will be iced with Italian meringue buttercream and decorate with gumpaste flowers.
